In order to make sushi, you must use rice that is both fresh and warm to the touch. For health and safety reasons, the fish should be kept refrigerated before being sliced and served. Sushi, in my opinion, is extremely healthy for your body if you eat it in moderation and include more sashimi and less tempura in your diet.
