Protein pancakes with apple syrup Serves 4

Ingredients 1 egg white 2 tsp vegetable oil 1/4 c egg substitute 3/4 c quick-cooking oats 1/4 tsp salt 1/2 tsp baking powder 3 packets Equal sweetener Directions In a large bowl, whisk together egg white and oil until frothy. Stir in remaining ingredients until just blended. Coat a large nonstick skillet with cooking spray and set over medium heat. For each pancake, drop about 1/4 cup batter into the pan. Cook until bubbles appear on top of pancakes and undersides are golden brown, about 2 minutes; turn pancakes over and cook an additional minute or two.(makes 4 servings)
