Yes, you can eat Prosciutto during the first semester of your pregnancy. However, many doctors advise against the use of any kind of processed meat including Prosciutto in the later stages of your pregnancy. This is due to the high amount of sodium in Prosciutto which may be harmful to you and your unborn baby. It has been found that Prosciutto has a very low level of nitrates compared to other processed meats, but it still contains about 200 mg/kg of sodium which is quite high for pregnant women.
