Salami is a close relation of mortadella and bologna, but it is seasoned with different ingredients. The name comes from the Italian word for salt. Salami was first made in the Mediterranean area. It has always been popular there because it can be stored without refrigeration or freezing.

Salami is a cured sausage that contains a mixture of pork and beef, some garlic, spices, and wine or vinegar. Because salami contains high amounts of nitrates, it will break down into potential cancer-causing chemicals called nitrosamines. To reduce the risk of eating salami you should avoid eating any other food with substantial quantities of nitrates which would include bacon, hot dogs, ham, and lunch meats. This way you get to enjoy your favorite flavors without increasing your risk of cancer.

You would have to limit yourself to only 1 slice because you cannot eat the bun that it is served on or any other high carbohydrate food item that may be with it on your plate.
