What is the coating on Brie cheese?

The outside of the cheese is covered in a hard, white rind. Cheesemakers inoculate the cheese with a white mold called Penicillium candidum, which forms the rind. The rind is formed by repeatedly pressing down on an edible mold that grows on the paste’s surface.

Do you take the white coating off of Brie cheese?

Because it’s edible, the moldy white rind of Brie is often eaten with the softer interior. Remove the soft center of a Brie by cutting off the top and slicing it open with a sharp knife if you don’t want to eat the rind.
