Pancetta is a meat that can be eaten raw. Although pancetta is typically seen as raw pork that has to be cooked, it is marketed fully cured and consumed raw. Raw pancetta is usually bought thinly sliced by people who eat it raw. You can eat cubed pancetta, but it will be more difficult to chew than finely sliced pancetta.
