Most cases of food poisoning last 1 to 2 days, and the symptoms go away on their own. If the symptoms persist for more than a week, the individual should consult with a healthcare professional. Cyclospora infections can be hard to recognize, and diarrhea can go for weeks.

Consuming expired crackers is unlikely to kill you, but it may not taste the best. Notably, some of the bacterial toxins found in expired food can be fatal. Food poisoning is usually mild and goes away on its own. However, some people require hospitalization. 

Consuming expired or past-best-by foods can expose your body to harmful bacteria, resulting in vomiting, diarrhea, and a fever. Signs and symptoms may appear immediately after eating contaminated food, or they may appear days or even weeks later. Food poisoning sickness can last for numerous days.

It’s difficult to say how long your food will last after the expiration date has passed, and each food is different. Dairy products have a shelf life of one to two weeks, eggs have a shelf life of almost two weeks, and grains have a shelf life of one year.
