However, if you need to eat these, there’s a lot you are supposed to know.
First, you will need to find a Dungeness crab that has passed away by itself. If it is dying, then this will be difficult. And if it dies after you eat it… well, no one said life was fair.
If your source for seafood is a fisherman who eats the ones he catches, without boiling them first, then avoid those kinds of creatures as much as possible. This should go without saying though. Most people would not let someone else cook their raw food, and eat it raw themselves either. That’s just common sense.
For those of you who are not familiar with crabs yet: do not boil live crabs in hot water! They can escape from the pot and crawl away before they die – which is pointless.
Crabs should be boiled in cold water, and then boiled some more until they die. It’s a little harder to cook them that way, but it’s much cleaner and safer for you!
To make sure your seafood is cooked properly: cut into the middle of the crab and look at what color the meat is. You might even want to use a thermometer if you know how to use one – but all cooks do not have this luxury. If it’s still orangey-red inside, then the crabs are still alive and kicking – so don’t eat them yet unless you want to get sick or catch blue crabs disease or something like that.
Another symptom of dead crabs is “tears”. They start leaking orange or red fluid once they are boiled. It’s harmless, but the crabs will taste worse than if they were alive while they cooked (which is pretty bad already).
