Bacillus cereus, a type of bacteria that can cause food poisoning, has been found in some samples of rice. When making horchata, uncooked rice is used, which is then soaked in water before being turned into a beverage (via All Recipes). In order to make the beverage, it is necessary to use cooked rice.

What can I do with leftover rice pulp?

What can I use in its place? Rice pulp is an excellent binder, but chia or flax seeds can be substituted. Alternatively, any grain milk leftovers, like oat or spelt, can be used to make these crackers.
