How do you know if eggplant is bad?

It’s squishy and/or soft. The skin’s luster has faded and/or it appears shriveled. The fleshy interior, including the black seeds, is slimy and/or brown in color. It has rotting or soft spots on or in it. It stinks or has a foul odor.

Is it safe to eat brown-skinned eggplant?

The flesh of the eggplant is likely to have tan to brown spots around the seeds. If this is the color you’re looking for, it’s edible. If the flesh happens to be more brown than white, the eggplant is likely to have spoiled and should be discarded.

What does the inside of a ripe eggplant look like?

Eggplants should be firm but not hard when ripe. The flesh should actually be white with and also have a slight green tint (orange eggplant ripens orange/green on the inside). If you are not sure about the ripeness of your eggplant, cut it crosswise and check the seeds. They must be easily visible.
