Scallops can actually be stored in the freezer for a long time. In order to keep your scallops fresh for longer, put them in the freezer as soon as possible after you receive them. Simply wrap the scallops in plastic and place them in the freezer’s coldest section to freeze (for up to three months).

Using a paper towel, pat dry your scallops under a tap of cold water for a few seconds. Do not cram the scallops together in a single layer in your freezer container. In the freezer, they shouldn’t form clumps, but you should still separate them.
